Today, some leaves sandwiched between two layers of cellophane framed in a cardboard frame to fit  our open toilet window. Hopefully now, son and I will find some relief from hay fever symptoms that suspiciously became all the more apparent after visiting the loo.

Vegan French Toast

 Combine -

 2 tabs of yeast flakes,

 3 tabs of maple syrup, 

2 tabs of flour, 

1 tab of vanilla essence 

and

 a  of pinch salt 

to 2 cups of almond milk.

 Because I only had a loaf of sandwich bread available I used two slices per serve, slightly toasted, before dunking one side of each slice in the batter, adding a layer of batter between the slices to glue them together while frying in the pan. 

Allow one to two minutes each side on medium heat.

Serve with banana mousse and blueberries.
